Kathy Grudin, a resident of SaddleBrooke Ranch from Bend, Ore., held a lefse-making demonstration at the Graves’ for Norwegian-loving friends on Jan. 12, just catching the last of the holiday/winter season and prepping for next year.
Uff da! Her patience and valued skill resulted in stacks of the lovely potato delicacy so treasured by those with Norse (or nearly Norse) heritage. On first tries, Chefs Randy, Pat, and Lowell found it natural to roll the dough to the thin transparency required. Still, their lefse shapes resembled continents and horses rather than the desirable round outline.
In any shape, fresh rolled lefse, lightly buttered, with a sprinkling of cinnamon sugar or plain were the perfect accompaniment to Norwegian soup, salad, and fruit soup for dessert. And, it warmed our Norwegian, Irish, and Scottish, etc., hearts.
